
INGREDIENTS
1 large filet mignon
2 small boxes raisins (without seeds)
1 small can pitted prunes
¾ cup chopped ham
¾ cup chopped walnuts
20 slices bacon
Juice of 1 lime
Salt and pepper
¼ cup melted butter
HOW TO PREPARE
Boil prunes to soften. Slice filet lengthwise, but not all the way through, and pound it a bit with a meat hammer. Pour lime juice over meat, season with salt and pepper. Place prunes on meat, then the ham, nuts and raisins; fold in half and close with toothpicks. Place bacon slices on top and tie with string 3 times, first tie not too tight. Place in roasting pan on grill with a little water in it. Pour butter over and bake in preheated oven at 400ºF (200ºC) for 45 minutes.
