Double Chocolate Cheese Muffins

A delicious recipe for your weekend!


  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 6 tablespoons cup unsweetened cocoa
  • 1 cup sugar
  • 1 cup semi-sweet chocolate chips
  • 1 cup ricotta cheese (don’t use low-fat/skim ricotta)
  • 2 eggs
  • 1 1/3 cups milk
  • 1 Tablespoon vanilla extract
  • 1/4 cup vegetable oil or melted and cooled unsalted butter


  1. Preheat the oven to 350°. Spray a muffin tin lightly with cooking spray.
  2. Mix the flour and next 5 ingredients in a large bowl.
  3. Place the ricotta in a medium bowl. Add the eggs, one at a time, beating well after each addition. Whisk in the milk, vanilla and oil until blended. Fold the ricotta mixture into the flour mixture until just blended.
  4. Spoon the batter into the muffin cups, and bake 20 minutes, or until a wooden pick inserted into the center comes out clean. Remove the muffins from the pans immediately, and cool on a wire rack.
