Eye of round with nut sauce


  • 1 ½ kg of eye of round
  • ½ cup oil
  • 1 onion, chopped
  • 2 green peppers, chopped
  • 4 tomatoes, chopped
  • ½ cup broth
  • 2 tsp sugar
  • 1 cup dry wine
  • 1 tbsp. flour
  • 2 tbsp. dry mushrooms
  • ½ cup chopped walnuts

How to prepare

Clean fat off meat and tie so it has a good shape. Season and place in pot with oil and brown on all sides. Once brown, take meat out of pot and in same oil brown onions, green peppers and tomatoes. Once cooked, add broth, sugar and then strain. Add wine. Reduce wine to half the amount and add flour, soaked and well-chopped mushrooms and place browned meat once again in pot. Add nuts, season and finish cooking over low fire. Cut meat in thin slices and serve on dish surrounded by potatoes and carrots and pour sauce over meat.
