Lime and Walnut Cheesecake

The year-end holidays are always the perfect opportunity to get together with friends and family while enjoying the Canadian winter. Our recipe is a delicious lime and walnut cheesecake. Yes, citrus fruits are the perfect order for the season! Check out this recipe!

Ingredients (for a 22cm diameter pan):

  •  200g walnuts
  •  100g unsalted butter, melted
  •  Juice and zest of 1 1/2 limes
  •  1 1/2 tablespoons of unflavoured gelatin
  •  400g cream cheese, at room temperature
  •  2 cups of whipping cream – cold
  •  4 egg yolks
  • 125 grams sugar
  • 20 ml lukewarm water


  1. Begin by making the base of the cheesecake – grind walnuts in a food processor, then add the melted butter until it looks like “wet sand”. Press into the pan and bake for 10 min at 180C. When ready, remove from oven and let cool.
  2. Whip the 35% cream and leave it in the refrigerator for later use.
  3. In an ovenproof dish and double boiler, stir the cream cheese until soft; set aside.
  4. Also in a double boiler, beat the egg yolks, sugar, warm water, lime juice and zest (using a whip). Remove from heat when it reaches a temperature of 160F / 70C
  5. Add gelatin to the lime mixture. Let cool before mixing it with the softened cream cheese.
  6. Lastly, gently stir in the whipped cream.
  7. Spread the cream mixture in the pan over the walnut base, and place in refrigerator.

Important: Let the cheesecake rest in refrigerator for at least four (4) hours or for the morning.
