Shrimp stew (moqueca) by Chef Ricardo Wolkoff

Well then, if you cannot go to the restaurant, put on your apron and get to work! The following is a recipe, by the chef, on how to make a Moqueca de Camarão – simple and full of flavour.



  • 300 gr of shrimp (clean and de-headed)
  • 2 tbsp of tomato extract
  • ½ can of coconut milk
  • 2 tbsp of dendê oil
  • 1 tbsp oil
  • 1 minced garlic clove
  • ¼ of an onion, minced
  • salt to taste
  • minced coriander to taste
  • malagueta pepper to taste


How to make it

Place the oil in a large pan and brown the minced onions. Next, add the garlic, the tomato extract, the coconut milk and the dendê oil. Mix well. Add the shrimp, salt and coriander. Mix a little bit more and let it boil. After it boils, let it cook for 10 more minutes on medium heat. To finalize, throw in a dash of malagueta pepper to taste. The moqueca is ready and can be served with rice and salad.
